Aromatics:Ripe Red Fruits| Body: Creamy| Acidity: Strawberry, raspberry, rose’|

As soon as this Marsellesa is cool enough to be drinkable, it becomes a mixture of strawberry pulp and raspberry, with an uplifting citrusy finish. This is like a coffee version of red fruit confectionery. On cooling the body increases and the fruit deepens to sweeten like a melon, with a little lime zest followed by a Rose’ like acidity. When cool this is soft and boozy like bruised fruits before fermenting.

Espresso Recipe:

In espresso, this was better than I could have hoped for.

Milk-based drinks:

16-18g of Coffee into 34-35g of espresso liquid in about 30 seconds. I have been brewing at 93.5C but 94+ will work too.

9 oz Milk-based drink: Raspberry, pink blancmange, Wow!

6oz Milk-based drink: More intensity and very slightly less of the sweetness.

Espresso:

This is a light roast, and in espresso, it delivers sours, limey acidity, and tart red fruits. You could extend the extraction, increase the temperature, or brew this as a filter.

Volcan Azul is a 5th-generation farm, producing many different single varietals and processes. The long game is the aim of quality, which we especially like at James Gourmet. The whole process is controlled by the farm and the operation is relatively small. These are all things that work for us. Coffee on a human scale with a history.

Marsellesa has become one of my personal favourite varietals that Alejo produces.
