Caffe Mille
Caffe Mille or Mille’ Espresso started life as a limited-edition espresso. As the name “1000” might suggest, it was going to be limited to a ton (or 1000 kg) a year. We started off using the main crops of Cup of Excellence farms, and over time, it has evolved.
Today Mille’ is Brazil-based and nearly everybody likes a chocolatey base to their espresso, married with our favourite washed coffee of the moment that we are using through Formula 6. We develop this a little more in the roast profile to create a richer coffee experience, akin to Chapin.
There are no secrets in our sourcing, and we always aim to be transparent.
Over the years, this coffee has been really popular with a number of trade customers serving this as a House Coffee. Naturally, it isn’t as popular as Formula 6.
Recipe:
My go-to recipe for Mille’at the moment is:
Brew Temp: 93- 94 °C
Dose: 17-18g
Milk-based drinks: 34-36g of espresso in 24-26 seconds (ish/ approximately)
Espresso: 45-55g 27-30 seconds
My target is just to try and get that super fruity sweetness and big chocolatey body.
