Here is our first new crop of Brazil of the 2024 season! WooHoo! Welcome back, Boa Vista Anil. Unsurprisingly, Brazils are wildly popular in espresso due to how comforting they are. The fact that many coffees from Brazil are more affordable (generally speaking) is what a lot of the “speciality coffee” business is built on, particularly if milk is involved.

I love the fact that you can brew this coffee in different ways to get a variety of experiences. On a personal level, I prefer the espresso with a lower dose, as I am very much into the fruit, but there will be more of our customers that like a bigger dose, maybe even brewed hotter to get a big chocolatey experience.

Flavour possibilities.

For the record, we are big advocates of milk-based espresso drinks going up to 9oz. It’s a long story and works well for everyone in the chain.

In milk, this is as comforting as something your mum might have made you at bedtime! Cocoa, rich chocolate, creamy and delicious. Without selling my soul (!) I could say “Classic Brazil” in milk, and more intensity as the drinks shrink.

Espresso.

Big dark chocolate and cocoa up front, followed by sweet white fruit and juicy acidity. If you like big, bold chocolatey espresso, then I recommend 18g shots into 34-36g of espresso liquid in the 28-32 second range. If, like me, you like the juicy side of things, I would reduce your coffee volume down to 16.5-17g, and then you can get a nice limey acidity and another dimension.

Recipe:
17-18g into 34g+ for milk-based drinks 26-30 seconds

17g into 45g for espresso. 26-33 seconds.

Such an easy and forgiving coffee to brew.

Farm Info

From the south of Minas Gerais, lies Mantiqueira de Minas. 82% of the farms are smallholders and much of the coffee is harvested and picked by hand.
